Menu & Recipe Development for Contemporary Neapolitan Pizzeria

Over the past four years, I’ve collaborated closely with a well-known pizzeria in Caserta (Campania - Italy), managing the development of their seasonal and limited-time pizza menus. 

My focus has been crafting original Pizza toppings reinterpreting iconic Italian dishes, blending traditional regional  recipes with global influences; spacing from Mozzarella, Miso & katsuobushi to Nduja and burrata, to reimage a  classics like spaghetti all’assassina, 

Every quarter, I design 4–6 new pizzas toppings that reflect the season while offering bold, structured flavors that stay true to the Neapolitan identity. My role extends from concept research to recipe development, kitchen guideline and serving instructions.  A strong emphasis is placed on practical execution, including how to prepare, scale, store, and use each component effectively throughout the stages of pizza assembly—before and after baking.
